It was at Hautvillers Abbey that Dom Pierre Perignon devoted his life to the perfection and reputation of champagne. Three centuries later, the Abbey's cellars still harbor the oldest and rarest vintages of Dom Perignon champagne, in a special reserve called the Oenoteque.
The Oenoteque is also the name given to a selection of rare vintages offered to connoisseurs by the Chef de Cave, Richard Geoffroy. A tasting of the vintages he has chosen illustrates the various stages of ageing. Aromas, structure, texture... these wines amplify the characteristics of a particular harvest as well as the unique Dom Perignon style.
