Henri Billiot is a small grower in the village of Ambonnay, legendary for the quality of the Pinot Noir. The estate is a mere 5 hectare in size so volumes are tiny with less than 4000 cases produced.
Old vines, low yields and a fastidious attention to detail in the vineyards are the key to the wines success and reputation. The wines are not filtered and never go through malolactic fermentation, they are pure expressions of their 100% grand cru terroir. Serge Billiot, the son of Henri believes doing everything by hand from remuage to disgorgement and is one of the most respected producers in the region. These are wines not meant for the faint-hearted, as they may appear a little austere in their youth due to the non-malo style and the sheer power & concentration of the wines.
