Paul Dethune

Dedicated to producing Champagne by the purest traditional methods, the wines are matured in 205 litre oak champagne casks to help develop complex aromatics. Strong believers in sustainable viticulture, showing respect for the soil, with no use of insecticides, and the addition of organic amendments that are permitted in organic viticulture when required.





The Dethune fanily have been cultivating grapes in the Grand Cru village of Ambonnay since 1610. Today, Pierre Dethune and his wife Sophie have 7ha planted to a 70:30 mix of Pinot Noir and Chardonnay all within Ambonnay and all farmed using biodynamic principles.
