The Boulard family have been tending their vines for 5 generations since 1792. They own land in 10.25ha of vineyard in seven villages and grow all three classic varieties.
The vine growing at Champagne Boulard is all about respect for the environment and real passion to preserve the terroir. The dedication to producing optimal quality fruit is staggering. Organic manuring and organic conditioning, manual training of the vines on wires for good separation of fruit and bunches, partial hand-thinning of leaves to give better aeration to the bunches, partial picking if necessary, and short pruning. Late harvesting allows for optimum ripeness and less need to chapitalise. Older Burgundy barrels are used for Pinot Noir, and Bordeaux barrels for the Chardonnay, natural yeasts employed, no fining or filtration and minimal dosage.
