Tasting Notes

A blend of 50% Chardonnay and 50% Pinot Noir from the 1996 and 1997 vintages. All from a single very old vineyard called 'Les Crayons'(chalk). Fermented and matured in small oak barrels with no malolactic fermentation. Frequent stirring of the lees during fermentation. Hand disgorged with a low dosage of 5.7 g/litre. This is Benoit's tour de force. He captures great fruit and richness yet balances this with freshness and finesse.He says that what differentiates Champagne from other wine styles is the ability to have massive weight and concentration of flavour, existing in counterpoint with elegance and vivacity.
